Mediterranean Bread

DSCN7385

A rare glimpse of the sun and we decided that supper should be cold meats with some of this delicious mediterranean bread. Making bread at home is much easier than many people think, no bread machines required, only bread flour and dried yeast. Both very cheap ingredients!

Fresh peppers and tomatoes can be used as well as anything from a jar. In fact this bread is great way of using up all the savory bits that seem to get left over in our fridge. We dug out some artichokes, sun dried tomatoes, asparagus, chorizo, artichokes and olives and grabbed some fresh herbs from the garden and got baking.

This bread is technically called “fougasse farcie”and is a traditional french flat bread. More importantly it’s perfect for a picnic being very filling and already including tonnes of yummy ingredients -leaving more space in your basket for the all important Pimms.
