Roasted Cauliflower Gnocchi with Crispy Kale

cauliCauliflower is having such a comeback! I’ve seen loads of amazing recipes lately for roasting whole cauliflowers, cauliflower pizzas, fritters you name it. I really thought it was just an internet food trend until I went to my local supermarket and only just managed to nab the last one from the shelves, people are obviously going wild for it. I decided to try something a bit different with this cauliflower gnocchi and I love getting my hands dirty so  really enjoyed making it, I don’t have a dough cutter but top tip: it turns out a pizza utter is the perfect substitute. What is also really great is that you can make a big batch and then freeze the gnocchi for use later, i’m so into freezing things I just love having lots of ready made meals stored up. 

The crispy kale was originally a total accident but it is such a revelation. It tastes a lot like crispy seaweed that you find in Chinese restaurants, of course smothering it in butter may counter balance some of its famous health benefits! Anyhow it adds a great texture to the buttery spicy gnocchi. Ps. here is a video with gnocchi rolling technique using a fork or board
